Rigorosamente in purezza, in linea con la filosofia aziendale del Podere Anima Mundi i 4 nuovi vini (Cannaiolo, Ciliegiolo, Sauvignon Blanc e Cabernet Franc) di cui si è appena svolta la prima raccolta: “Abbiamo anticipato la vendemmia di 3 settimane per cercare di tutelare la quantità: la gelata di aprile e la scarsità d’acqua dei mesi estivi avevano già falciato il 25% dell’uva – spiega Marta Sierota, titolare dell’azienda della provincia di Pisa – una vera sfida anche solo da un punto di vista organizzativo: nella nostra zona non siamo abituati a vendemmiare a fine agosto. Comunque l’importante è che il vino è in cantina a fermentare e le prerogative per un buon prodotto ci sono tutte”.
Ci puoi anticipare qualcosa in merito alle new entry?
Il nostro Cannaiolo, Ciliegiolo e Sauvignon Blanc andranno a comporre una nuova linea coerente ai dettami aziendali di purezza, pulizia e terroir, ma con un rapporto qualità prezzo più interessante. Diverso il discorso per il Cabernet Franc: proviene da una vigna di oltre 50 anni, non so ancora che ruolo affidargli all’interno del nostro parco prodotti. Ma so che chi degusterà i vini di Anima Mundi 2017 si troverà di fronte a nettari interessanti, dalla personalità cristallina, più concentrati rispetto alle scorse annate.

Being strictly monovarietal, the 4 new new wines produced by Anima Mundi (Cannaiolo, Ciliegiolo, Sauvignon Blanc and Cabernet Franc) are perfectly in line with the philosophy of the winery: we anticipated the harvest of 3 weeks and tried to preserve a good quantity. The cold strike of April and the siccity during the months of summer already killed a 25% of our grapes – says Marta Sierota, manager of this winery from Pisa – a real challenge considering only its arrangement. In our area we are not used to harvest during the end of August. By the way, what really matters is that the wine is fermenting in the cellar and there’s the potential for obtaining a very good product”.
Could you give us some previews about the new entries?
Our Canaiolo, Ciliegiolo and Sauvignon Blanc will be part of a line which will follow the monovarietal, neatness and terroir rules of the winery, but with an interesting quality/price rapport. A different matter is the one of the Cabernet Franc: it comes from a 50 years old vineyard and sincerely I still don’t know what kind of role it will play among our list of products. What is certain, instead, is that the ones who will taste vintage 2017 wines produced by Anima Mundi will find interesting nectars with a cristalline personality, which will be more intense if confronted with the last vintages.
