Una scelta per preservare la qualità dei propri nettari.
E’ iniziata il 25 di agosto la vendemmia di Carus Vini, l’azienda di San Casciano val di Pesa che unisce vini di qualità e agricoltura ecosostenibile. Guido Carissimo, fondatore di Carus Vini, ci racconta com’è andata questa vendemmia: “E’ stata una raccolta difficile a causa della persistente siccità. Per ottimizzare la qualità abbiamo deciso di anticipare la vendemmia di 3 settimane rispetto al periodo di riferimento. I dati del laboratorio sono però incoraggianti: i valori, in linea con le annate buone, ci fanno ritenere di poter garantire il nostro solito livello qualitativo. Diverso il discorso dal punto di vista della quantità: i numeri sono molto contenuti, sia a causa della gelata di aprile che ha falcidiato almeno il 30% del nostro raccolto, sia per la scarsità d’acqua estiva”. Il 2017 sarà una di quelle annate che non si scordano viste le avversità meteorologiche che democraticamente hanno colpito tutti i produttori. Ed è in questi casi che le scelte dell’uomo e la sua esperienza col frutto di Bacco fanno la differenza. Giovanni Celani, cantiniere di Carus Vini nonché custode dei suoi filari nella provincia di Firenze, fa eco all’analisi di Carissimo:
“Rispetto agli scorsi anni prevediamo un calo quantitativo di prodotto, a fronte di una buona qualità: la ghiacciata di aprile non ha risparmiato nemmeno le nostre vigne per non parlare della mancanza di precipitazioni atmosferiche a giugno, luglio e agosto. In compenso è stata premiante l’assenza di malattie”.

Carus Vini: the harvest starts three weeks in advance
The winery’s choice is driven by the willingness to preserve the quality of the grape.
The grape harvest at Carus Vini started on the 25th of August. Guido Carissimo, the founder of Carus Vini – a winery in San Casciano Val di Pesa where wine and sustainable agriculture coexist – talks about this harvest: “it was a difficult one, due to the constant drought. In order to optimize the quality, we decided to start the harvest three weeks earlier than usual. The laboratory testing results are anyway promising: the data are in line with the ones obtained in the good years, therefore we are confident in guaranteeing the same quality level as usual. On the other hand, if we look at the quantity produced, things are a bit different: we had smaller numbers this year, mainly as a result of the frost we had in April – which ruined at least 30% of our harvest – and of the summer drought”. The 2017 will be surely remembered for its adverse weather conditions that democratically impacted each and every wine producer. In such difficult situation, it is crucial to have enough knowledge and to make the right choices. Giovanni Celani, Carus Vini’s cellarman and guardian of its vineyards in the Florence province, confirms what Guido Carissimo mentioned: “we will have a decrease in the amount produced compared to the other years: the April frost and the drought in June, July and August damaged our vines, but the lack of diseases was rewarding and the quality will be good”.
