Palagione, il racconto di una vendemmia

“Aspettavamo il ripetersi dell’antico rituale come fosse l’unica certezza del momento” racconta Giorgio Comotti su una vendemmia terminata nel migliore dei modi. E ora, si aspetta…

“E così anche la vendemmia 2020 è terminata, lasciandoci il ricordo di un incredibile divenuto realtà”. Parla così Giorgio Comotti, che da oltre vent’anni, insieme alla propria famiglia, porta avanti il Palagione, splendida cantina situata lungo la strada che congiunge San Gimignano a Volterra. Una terra ricca di storia, dove si fa vino da secoli e che ha affascinato proprio per questo legame con le tradizioni del passato anche la moglie Monica. Insieme, ne hanno vissute tante di vendemmie, ma ognuna “ha una storia a sé, un qualcosa che ti resta nel sangue, nel DNA di chi verrà e questa forse più di altre”.

Già, perché il 2020 non può essere un anno come gli altri e il racconto di Giorgio su questa vendemmia lo dimostra. “La preoccupazione dell’invenduto, gli irrazionali e forzati imbottigliamenti per svuotare i tini, un’estate lunga e tra le più calde con un sorprendente Sangiovese che in alcuni casi maturava prima del precoce Merlot, ci avevano destabilizzato e ci condizionavano. Aspettavamo il ripetersi dell’antico rituale come fosse l’unica certezza del momento, la liberazione da un qualcosa di oscuro e incredibile che ci aveva più che turbato; attendevamo con ansia un qualcosa di conosciuto, che pur nell’abituale incertezza della natura ci consentiva di muoverci su un percorso, ogni anno differente e imprevedibile, ma noto”.

Finalmente, dopo i ripetuti assaggi e le quotidiane visite in vigna, la vendemmia ha inizio.

Alla fine, il bilancio di questa vendemmia 2020 è più che ottimo. “Le Vernacce appaiono sin da ora fresche, profumate e sapide come piacciono a noi, il Sangiovese scalpita nervoso come un adolescente e il tempo lo renderà ancor più gradevole”. 

Un risultato ottenuto con attenzione e passione, senza lasciar niente al caso: “Grazie a una conduzione esclusivamente familiare, abbiamo ottenuto una scrupolosa parcellizzazione dei vigneti, riuscendo ad isolare all’interno di appezzamenti apparentemente omogenei diverse microaree. Già dalle iniziali operazioni agronomiche, possiamo così definire e suddividere le uve in relazione alle differenti e future tipologie dei nostri prodotti”.

A una raccolta rigorosamente manuale, segue una vinificazione separata e dedicata “a ogni singolo cru di Vernaccia e di Sangiovese che rappresentano il cuore della personalità della cantina”. Piccoli dettagli che però, alla fine, danno i loro risultati: “ogni specifico elemento, infatti – conclude Giorgio – ci consente la valorizzazione di una identità aziendale ben riconoscibile e riconducibile ed essa”.

“And so the 2020 harvest is also over, leaving us the memory of an incredible reality”. This is how Giorgio Comotti speaks, who for over twenty years, together with his family, carries on the Palagione, a splendid winery located along the road that connects San Gimignano to Volterra. A land rich in history, where wine has been made for centuries and which fascinated his wife Monica for this connection with the traditions of the past. Together, they have lived many harvests, but each one “has its own story, something that remains in your blood, in the DNA of future generations. This perhaps more than others”.

Yes, because 2020 cannot be a year like any other and Giorgio’s account of this harvest shows it. “The concern of the unsold, the irrational and forced bottling to empty the vats, a long warm summer with a surprising Sangiovese that in some cases matured before the early Merlot, had destabilized and affected us. We waited for the ancient ritual to repeat itself as if it were the only certainty of the moment, the liberation from something dark and incredible that had troubled us; we awaited something known, that even in the usual uncertainty of nature allowed us to move on a path, each year different and unpredictable, but known”.

Finally, after the repeated tastings and daily visits to the vineyard, the harvest begins.

In the end, the balance of this 2020 harvest is more than excellent. “Vernaccia already appears fresh, fragrant and savory as we like, the Sangiovese chomps at the bit as a teenager and time will make it even more pleasant”.

A result obtained with care and passion, without leaving anything to chance: “Thanks to an exclusively family run, we have obtained a scrupulous parcelling of vineyards, managing to isolate within seemingly homogeneous plots, several micro-areas. From the initial agronomic operations, we can define and subdivide the grapes according to our future products.

A strictly manual harvest, followed by a separate vinification and dedicated “to every single cru of Vernaccia and Sangiovese that represent the heart of the personality of the winery”. Small details, however, at the end, give their results: “every specific element, in fact – concludes Giorgio – allows us the enhancement of a company identity well recognizable and traceable to it”.
