Azienda Agricola Cepol: il vino frizzante col fondo della tradizione

La famiglia De Conto porta alla ribalta il bianco frizzante rifermentato in bottiglia

Ci sono vini che sembrano un semplice ritorno al passato ma che in realtà sono un’affascinante istantanea del presente, con una storia da raccontare. Uno di questi è il Vino bianco frizzante con il fondo dell’Azienda Agricola Cepol, realtà situata in cima a un piccolo rilievo nel cuore delle colline del Conegliano-Valdobbiadene Prosecco Superiore. Fondata alla metà del secolo scorso da Luigi De Conto, oggi è gestita da Antonio De Conto, dal figlio Mattia e il nipote Eros, con Sara De Conto responsabile commerciale.

È un’azienda familiare, nata e cresciuta nella terra del Prosecco DOCG, e si estende su cinque ettari di vigneti distribuiti sui dolci pendii che circondano il centro aziendale. Particolarmente attenta alla sostenibilità ambientale in viticoltura, fin dagli esordi l’Azienda Agricola Cepol si è posta l’obiettivo di valorizzare i vitigni autoctoni, dalla vite alla bottiglia. Ecco perché, accanto ad altre produzioni, il prodotto che sta particolarmente a cuore a tutta la famiglia De Conto è proprio il Vino bianco frizzante col fondo “Cepol”, ricavato dai vitigni autoctoni Glera, Perera e Biancheta Trevigiana. È un vino rifermentato in bottiglia, che sta vivendo una seconda giovinezza sia a livello di consenso di mercato sia di visibilità proprio grazie al lavoro dell’azienda Cepol, capace di coniugare tradizione e innovazione e di riportare alla ribalta alcune produzioni di nicchia. Il vino passa dalla vasca in cantina alla bottiglia, dove poi rimane a fermentare naturalmente. Viene poi stoccato in magazzino a una temperatura che si aggira intorno ai 18C. Qui comincia il suo lento processo di maturazione che dà appunto origine al fondo e che dura circa tre mesi.
La naturalezza del Cepol con il fondo consiste proprio nella lenta maturazione naturale, a temperatura ideale. È un percorso spontaneo e non indotto, come succede per le altre varietà. Questo ritmo slow permette al vino di far decantare lieviti ed altri residui di maturazione, fino a perdere quelle note asprigne e cariche di sapori pesanti, che gli appartengono al momento dell’imbottigliamento, e diventare un calice di profumi di vigna ed aromi fruttato-boschivi, che lo rendono particolare e diverso da annata ad annata.

Qualche consiglio su come servirlo in modo ottimale? Prima di versarlo è meglio lasciarlo riposare al fresco per consentire ai lieviti, che formano appunto il fondo, di decantare, dando così la possibilità di bere un vino limpido. La seconda accortezza: scaraffarlo in modo che si ossigeni, prima di degustarlo.
Il Vino bianco frizzante con il fondo Cepol, una volta scaraffato, non perde la sua briosità: la bollicina rimane viva, piena, persistente ma non pesante, mantiene freschezza, naturalezza e tipicità. Spesso, se bevuto il giorno successivo all’apertura, risulta ancora migliore perché perde i profumi di eccesso e valorizza quelli di frutta e sottobosco dati dalle uve che lo hanno originato. La chicca che quasi nessuno conosce? Il fondo che rimane nella bottiglia può essere utilizzato per aromatizzare diverse ricette in cucina, come arrosti e risotti.

 

THE CEPOL'S FARM: A SPARKLING WINE WITH WITH ROOTS OF TRADITION

There are wines that seem a simple return to the past but which are actually a fascinating snapshot of the present, with a story to tell you. One of these is the sparkling white wine with the bottom of the Cepol’s farm, a reality located on top of a small hill in the heart of the hills of Conegliano-Valdobbiadene Prosecco Superiore. Founded in the middle of the last century by Luigi De Conto, today it is managed by Antonio De Conto, his son Mattia and his nephew Eros, with Sara De Conto, commercial manager.
It is a family company, born and raised in the land of Prosecco DOCG, and extends over five hectares of vineyards distributed on the gentle slopes that surround the business center. Particularly attentive to environmental sustainability in viticulture, from the beginning the Cepol Agricultural Company has set itself the goal of enhancing the native vines, from the vine to the bottle. This is why the product that is particularly dear to the family, precisely thesparkling white wine with the “Cepol” bottom, obtained from the native vines Glera, Perera and Biancheta Trevigiana. It is a refermented wine in the bottle, which is experiencing a second youth both in terms of market consensus and visibility thanks to the work of the Cepol’s  company, capable of combining tradition and innovation and bringing some products to the fore. The wine passes from the tank to the bottle in the cellar, where it then remains to ferment naturally. It is then stored at a temperature of around 18C. Here begins its slow maturation process that gives rise to the bottom and lasts about three months.
The naturalness of Cepol with the bottom consists precisely in the slow natural maturation, at ideal temperature. It is a spontaneous and not induced journey, as happens with other varieties. This slow rhythm allows the wine to decant yeasts and other ripening residues, to the point of losing those sour notes and heavy flavors, which belong to it at the time of bottling, and become a glass of vineyard aromas and forest-fruity aromas , which make it special and different from vintage to vintage.
Any advice on how to serve it optimally? Before pouring it, it is best to let it rest in a cool place, which form the bottom, to settle, thus giving the opportunity to drink a clear wine. The second foresight: rub it so that it is oxygenated, before tasting it.
The sparkling white wine does not lose its vivacity: the bubble remains alive, full, persistent but not heavy, maintaining freshness, naturalness and typicality. Often, if drunk the day after the opening, it is even better because it loses the aromas of excess and enhances those of fruit and undergrowth given by the grapes that originated it. The gem that almost nobody knows? The bottom that remains in the bottle can be used to flavor different recipes in the kitchen, such as roasts and risotto.
