Ottimismo a Castello Poggiarello: grandi aspettative per il raccolto 2017

Una vendemmia difficoltosa in Italia e nel mondo quella del 2017, che ha portato molte aziende a raccogliere -prematuramente- la metà del prodotto che generalmente si aveva a disposizione: gelate primaverili, grandine e un’estate siccitosa hanno risparmiato ben poco. In controtendenza l’annata a Castello Poggiarello, nel comune di Sovicille (Siena), due fattori hanno contribuito al mantenimento della salute dei grappoli: l’impianto a goccia in primis e l’accurata gestione del verde, eseguita in modo da favorire lo sviluppo del grappolo e da fungere nel contempo come riparo dalle temperature eccessive e dalle forti soleggiate di questa estate.

“Prima della vendemmia vera e propria” racconta Luigi Fineschi Pianigiani che, con il padre, porta avanti l’azienda “abbiamo effettuato la pre-raccolta per il pied de cuve, una antica tecnica che costituisce la base per ottenere la fermentazione spontanea dei mosti senza l’utilizzo di lieviti selezionati”.

Nello specifico la tecnica del pied de cuve è uno starter della fermentazione che prende il via da lieviti -indigeni- non -Saccharomyces per lasciare spazio, solo in un secondo momento, al sopravvento dei Saccharomyces che portano a termine il processo.

“Grazie a questo processo” continua il titolare dell’azienda “possiamo imprimere ai vini un carattere estremamente territoriale e al tempo stesso controllare le fermentazioni con metodi naturali. I lieviti indigeni, infatti, sono i lieviti più caratteristici e che danno al vino la possibilità di sprigionare un’impronta aromatica caratteristica della microzona. Ecco perchè ciascun vitigno ha il suo pied de cuve”. Terminata questa prima fase è iniziata la raccolta vera e propria che ha registrato una quantità di prodotto leggermente minore rispetto agli scorsi anni, ma di una qualità che viene definita, senza falsa modestia “assolutamente eccellente”.

A Castello Poggiarello una particolare attenzione è stata riposta anche nel processo della fermentazione, che viene praticata in modalità intracellulare: il procedimento consiste nel porre gli acini, precedentemente separati dai raspi, nelle ceste di raccolta per poi trasferirli nei tini di fermentazione senza l’utilizzo di pompe o altri mezzi tecnici che ne minerebbero l’integrità. Il tutto, quindi, viene effettuato esclusivamente a mano e lo scopo è quello di favorire la fermentazione del chicco integro.

 

Optimism at Castello Poggiarello: great expectations for vintage 2017

The one of 2017 was a difficult harvest in Italy and in the world, which made many wineries prematurely harvest  half of the fruits: springtime cold strikes, hailstorms and a very dry summer showed no mercy. Oppositely to this, during this vintage at Castello Poggiarello, in the district of Sovicille  (Siena), two factors contributed to keep grapes healthy: first of all the drop shaped implant, then an accurate management of the leaves, which was done to encourage the ripening of berries and at the same time to protect them from the crazy temperatures and the hard sun of this summer.

“Before the real harvest” tells us Luigi Fineschi Pianigiani, that together with his father manages the winery, “we operated a pre-harvest for obtaining the pied de cuve. It’s an ancient technique that constitutes the first step to obtain a spontaneous fermentation of the must without using selected yeasts”.

To be specific, the pied de cuve technique is a starter of the fermentation that begins from indigenous non Saccharomyces yeasts and, only in a second moment, they are substituted by the Saccharomyces that will end the whole process.

“Thanks to this process” , continues the owner of the winery, “we are able to impress an extremely territorial character to our wines and at the same time we manage to regulate fermentations through natural methods. The indigenous yeasts, in fact, are the most typical ones and gives the wine the chance to spread the aromatic print of its micro area. That’s why every grape variety belongs to its own pied de cuve. After the end of this first phase, begun the real harvest that registered less quantity of product than the last years,  but a quality that we defined, without being modest, absolutely excellent”.

At Castello Poggiarello a special care went also to the process of fermentation, which is operetad in intracellular modality: the procedure consists of putting the berries, previously separated from the rasps, into baskets, then they are transferred to the fermentation tanks without using pumps or technological means that would ruin their integrity. So, everything is exclusively handmade and the goal is to promote the fermentation of untouched berries.
